Overview: Oshi (formerly known as Plantish)
90% of the world’s marine fish stocks are designated as fully exploited, overexploited or depleted.
Seafood is in demand for its perceived health benefits, yet much of it is contaminated with mercury and other pollutants, while farm-raised fish is often filled with antibiotics and pesticides.
Producing whole-cut fish fillets from plants is complex because fish has a fibrous texture that plants do not, and a complicated fillet structure. Other companies working on plant- or cell-based salmon are developing products such as smoked salmon slices, minced products, or small pieces such as sushi-style cuts that are not as technically challenging.
Oshi is developing a breakthrough additive manufacturing platform to create whole-cut fish fillets at low cost and massive scale.
Oshi uses a reverse-engineering approach, based on extensive analysis of real salmon on the molecular level, and then seeking those specific molecules in plant-based materials.
By controlling both the machines used for production as well as the formulation, Oshi has the tools needed to accurately copy texture, structure, and taste.
